Years ago, we were so excited to see “gluten-free” options at a local pizzeria so naturally we ordered gluten-free pizza. It took about an hour before my youngest daughter and I started feeling rather ill. “Gluten-free my @ss!” was the first response, until I took the time to realise how ignorant we had been. Yes, the base was gluten-free, probably certified too. But the pizza was treated like all the other pizzas and we had gotten “glutened” by cross contamination.
This is how you learn though … through experience and through sharing the information so that those new to a gluten-free lifestyle will not be as ignorant as we were.
